Blogmas Day 10: Mini mince pie pastry bites

This is my first foodie post of Blogmas 2018 and it’s a tasty recipe for all you mince pie fans!

I have developed a real love of mince pies over this recent festive season but as I follow the SW plan I’m trying to find ways to enjoy my favourite festive treats and stay on plan (ready for the inevitable over indulgence on the main days of Christmas)

So, this recipe, although SW friendly is still great for anyone looking for a twist on a classic, a bite sized treat of Christmassy goodness that won’t add to the waistline as heavily as a traditional mince pie might.

This recipe uses Light puff pastry, so a bit different to the traditional short crust.

It is so simple, and those recipes are the best kind.

Ingredients

-One roll of Tesco light puff pastry (Not frozen)

– A jar of Tesco Mincemeat

-One egg, beaten. (To egg wash)

-Sweetner (To sprinkle)

Recipe

Roll out the pastry flat and cut into squares (roughly 5cm x 5cm)

I weighed each square to make sure that it was 20g each. If you aren’t on SW you won’t need to be so particular.

On each square add a teaspoon of mincemeat.

Fold over the pastry from one side to the other and crimp along the edge to stop any leakage.

Lay the back onto the baking parchment that the pastry comes in, on a bakig tray.

Beat the egg and brush over the top of each one to help them turn golden.

Sprinkle each one with a little sweetener.

Bake in the over for 10/12 minutes on 200Β°.

Enjoy hot or leave to cool.

I prefer them warm with a cuppa.

These work out as 5 syns each which I don’t think is too bad. One with a cuppa would be perfect to get that festive mince pie hit.

20g (ish) of light pastry 4.5 syns

1 tsp mincemeat (0.5 syn)

Total: 5 syns each.

What’s in my bag? Slimming World edition.

If you follow my blog you’ll know that I follow the Slimming World weightloss plan and attend class. I dont really talk about Slimming World much on my blog but it is an important part of my day to day life so I thought I’d talk a bit more about it in this blog, incase those who read my blog are interested and to help others if they read this and think it could be for them too. 

So, what is Slimming World? (Just a little bit about it incase you havnt heard about it before!)

It’s basically a food optimising plan that allows you to have a bit of everything (in moderation) you can still eat carbs, and meat and of course lots of fruit and veg but it’s cooked in a healthier way. It makes you think about alternatives to higher fat foods that are just as yummy and better ways to cook these foods. 

The Slimming World plan is so easy to follow and so versatile that there isn’t much you can’t eat. It works really well for me and when I stick to it (which isn’t always, I’m only human) then the results are fab! I go to class with my two sisters and brother in law, it’s much nicer going with others! I would never have walked through the doors if my sister hadn’t have gone first.

So, what’s in my bag for Slimming World (SW)?

Firstly lets just take a look at my awesome shopping bag! I usually just grab one of these material bags for SW and pop what I need for the meeting in them as it’s super quick. I love this one, it’s so me! When I’m shopping there are just some things I can never resist.

The first thing I always put in my bag is my SW book …

The black book is your main book with the details of the plan,recipe ideas and syns, this is also where you log your weightloss. Cant go without this! 

I also can’t go without my purse as you have to pay, Β£4.95 until you reach your target weight.

Every week the person who has lost the most weight two weeks consecutively is awarded Slimmer of the week. We all take a free food in to go in the basket and this is what the winner gets. I grabbed a nice big Carrot, an apple and a satsuma! All speed foods which speed up your weightloss. 

It’s also nice to have a lovely hot drink during the meeting so I grabbed my Cath Kidson mug to use β˜•

And finally, low syn snacks.

I don’t eat much if anything after lunch on a weigh in day as my meetings at 7.30 so I eat dinner afterwards. For my snacks to munch on after weigh in I grabbed a pack of sweet & Salty popcorn from Aldi and a pink & white marshmallow, a sweet treat. (I didn’t eat all 4 I took one each for my fam)

And that’s it! 

I’m going right back to basics this week and writing this helped me too! You only get out what you put in so fingers crossed for a big loss on the scales. My aim for 2017 is to become, or get as close as I can to my target weight by the summer. Holidays and the summer holidays in particular are hard so I want to smash it until then πŸ‘Š

A Slimming World update 🍳

I thought I’d do a quick update on Slimming World since the wedding (Is she going to shut up about this wedding anytime soon? Probably not :mrgreen:)

I was maintaining for quite a while Pre wedding in order to fit into my dress and am chipping away at the weight I put on from the wedding/ the week after when I wasn’t very strict 😜 

This week I lost 1/2 a lb which you probably think was barely worth it but I had a bad  weekend (bad in terms of SW, great for my stomach) with Tim’s birthday celebrations so I was doing damage control this week, and as they say a loss is a loss after all!!

My current countdown is to this…

Two weeks to go!!!

Two weeks to go means two more ‘weigh ins’. I’m hoping for two good loses in these weeks and there shouldn’t be anything in my way, fingers crossed.

My aim this week: 2lbs.
Next week is the last few days of term then it’s the summer holidays, so planning is going to be the key to success as well as…

– Lots of healthy yummy snacks

– Meals ready prepared 

– A list of foods that I can use my syns on

– Lots of speed foods
